Directions For Use:
Apply "Stefan's Best Wild Hog Rub!" liberally to pork, squirrel, rabbit, or poultry.
Massage seasoning well into meat and grill or smoke until done, serve with cold beer!
1 Package "Stefan's Best Squirrel Chili Mix"
3 Pounds boneless squirrel (can also use venison, pork, or beef)
1 can diced tomatoes w/green chilies
1 Large Onion, diced
24oz. Beef, venison, or pork stock
Brown all meat in bacon fat, remove from pot
Sweat onions in pot
Deglaze pot with a little beer, cook off alcohol
Return meat to pot, add chili mix and tomatoes
Make up volume with 1/2 stock and half beer, to just cover meat
Simmer on low 4 hours, adding a little water as needed to keep meat covered.
After 4 hours, turn up the heat a little bit, don't add any more water, and stir frequently until reduced by 1/3.
Thicken with a few tablespoons of cornmeal.
Serve hot with cornbread or tortillas.
